Today I made some Almond Cookies to take to Heritage Quilting tomorrow. They are like a sugar cookie only with a yummy almond flavour to them…an old family favourite!
Judging by the shape of the recipe I wonder how many times I’ve made these cookies?
Almond Cookies
1 C. Margarine
1 C. sugar
1 egg
2 tsp. Almond extract
1 tsp. Vanilla
2 1/4 C. flour
1/2 tsp. baking soda
1/2 tsp. salt
blanched almonds
Combine margarine, sugar, egg, almond extract and vanilla, beat until fluffy. Mix dry ingredients and add to the margarine mixture. Chill dough. Preheat oven to 350 degrees. Shape dough into 1” balls, dip in sugar and push on an almond. Place on an ungreased cookie sheet and bake for 12 min. or until lightly brown. Enjoy!~P
